Our Executive Chef & Culinary Team

Ng Kam Kwan 黄锦冠

Executive Chef Owner 実柚 ~みゆ ~ Miyu

Chef Ng Kam Kwan brings over 22 years of Japanese culinary expertise to MIYU Singapore. Beginning at Sushi Jyo, he trained through Singapore’s most acclaimed Japanese restaurants — Tsujiki Sushidai, Hide Yamamoto, and Kacyo — developing an authoritative command of Edomae-zushi: the historic Tokyo sushi tradition demanding mastery of every element, from the seasoning of shari (sushi rice) to the careful ageing of fish to develop umami. His menus are guided by shun — the Japanese principle of peak-season cooking — with premium ingredients sourced weekly from Toyosu Market and air-flown directly to Singapore. Chef Kwan’s technical discipline and sensitivity to seasonal produce define the MIYU omakase experience.

Chef Kwan can be reached at +65 9190 7956 or email him at dining@miyu.sg.
