Miyu’s dinner omakase Singapore offering is an intimate counter experience at Dempsey Hill, guided by Executive Chef Owner Ng Kam Kwan. With over two decades of Japanese culinary training — including tenures at Hide Yamamoto and Kacyo — Chef Kwan brings a deep command of Edomae-zushi and Japanese seasonal cooking to every dinner sitting at Miyu.
The dinner omakase menu at Miyu is structured across three tiers. The 宝 ~ AKAIBARA ($228) is a refined cooked-food omakase for guests who prefer prepared courses; the 金 ~ MIYU ($238) is a full sashimi and sushi omakase featuring the finest seasonal cuts from Toyosu Market; and the 王 ~ CHEF’S OMAKASE ($278) is a premium course menu that showcases the full breadth of Chef Kwan’s craftsmanship with rare seasonal ingredients. Premium A4/A5 Wagyu is also available on request.
Every dinner omakase at Miyu Singapore is built around shun — the Japanese concept of peak-season ingredients. Courses typically include seasonal appetisers, sashimi of the week’s finest catch, warm chawanmushi, a hot course, a thoughtfully sequenced nigiri selection, a signature hand roll, and a seasonal dessert. All ingredients are air-flown fresh from Japan each week, ensuring that every dinner omakase experience at Miyu reflects the true flavours of the Japanese season.
Miyu has been welcoming guests at 13A Dempsey Road, Dempsey Hill since 2019. The intimate counter seats fill quickly — we recommend booking your dinner omakase at Miyu Singapore at least two to three weeks in advance. Dinner service runs nightly from 6.30pm to 10.30pm (last order 8.30pm), Monday to Sunday.
