Edomae omakase is not a style you can buy your way into. It is a set of habits — curing, ageing, pressing, timing — carried from the fish stalls of old Tokyo into the hands of a chef who has done the work. At 実柚 ~ みゆ ~ MIYU, Executive Chef Owner Ng Kam Kwan has spent over 22 years learning those habits, and he practises them nightly at a small counter on Dempsey Road.
Singapore has no shortage of omakase counters. What is rarer is Edomae craft offered at a sincere price. Lunch at MIYU begins at $128; dinner at $228. Not the cheapest in the city, and not trying to be — simply the honest cost of doing the work properly.
What makes omakase "Edomae"?
Edomae-zushi (江戸前寿司) took shape in Edo — present-day Tokyo — in an age before refrigeration. Fish could not simply be sliced and served; it had to be treated. Those treatments became the tradition:
- Curing and marinating — kombu-jime, zuke, salt-curing. Techniques that draw out water and concentrate flavour rather than mask it.
- Ageing (neta no jukusei) — resting fish so its umami deepens. A day-fresh cut is not always the best cut, and knowing the difference is the craft.
- Shari — the rice. Seasoned with vinegar and served near body temperature, it is the half of the nigiri most guests never think about and every Edomae chef thinks about constantly.
- Nigiri as sequence — the order of pieces is composed, moving from lean to rich, so that the meal has a shape.

Edomae omakase at MIYU: what the counter offers
Chef Kwan trained across more than two decades of Japanese kitchens, including Hide Yamamoto and Kacyo, before opening MIYU at Dempsey Hill in 2019. Ingredients are air-flown from Toyosu Market each week, and the menu is rebuilt around shun — whatever has reached its peak that week, not whatever is convenient.

Edomae omakase and price: what you are actually paying for
Singapore’s omakase counters span a wide range, and the number on the menu reflects several things at once: the rarity of the fish, the chef’s lineage, the address, and the room. Two of those are ingredients and craft. The other two are overhead.
