The same Toyosu fish, a different price

Singapore’s serious omakase counters draw from the same source: Toyosu Market in Tokyo. MIYU flies in its ingredients from Japan weekly, and the season decides the menu — sakura masu in spring, Hokkaido uni in summer, sanma in autumn, buri in winter. The tuna, the uni, the kohada on our counter were swimming in the same waters as the tier above. What changes across the price bands is rarely the origin of the fish. It is the size of the overhead the fish has to carry.
