Omakase — “I leave it to you” — asks a diner to place the meal in the chef’s hands. It is a quiet act of trust, and for many guests in Singapore it is also unfamiliar territory. Below are the questions we are asked most often at MIYU, our Edomae omakase counter at Dempsey Hill. If your question is not here, please reach out to us — we are always glad to help before your first sitting.
What is omakase, and how is it different from ordering sushi à la carte?
In an omakase meal, the chef selects and composes every course around the finest ingredients that arrived that week, rather than the guest choosing from a fixed menu. The sequence, the pacing and the pairings are all considered as one whole. It is closer to being cooked for by someone who knows exactly what is at its peak than to picking dishes from a list. Our complete guide to omakase explains the tradition in full.
How much does omakase cost in Singapore?
Omakase in Singapore spans a wide range — roughly $80 at the entry level to well beyond $500 at the Michelin-starred counters, where dinner often begins near $300. Price reflects sourcing, the chef’s experience, the number of courses and the setting. We set out how each tier is built in our guide to omakase prices in Singapore, and where genuine value tends to sit.
How much does omakase cost at MIYU?
At MIYU, lunch omakase begins at $128 and dinner omakase at $228, with dinner offered across three tiers ($228, $238 and $278). We hold to our promise of the finest quality at sincerest prices — the same Edomae discipline and Japan-sourced seasonality you will find at far costlier counters, without the markup a star tends to carry.
What is Edomae omakase?
Edomae refers to the historic Tokyo style of sushi-making. It is defined by careful preparation of the shari (the seasoned rice), by ageing and curing fish to draw out its umami, and by a restraint that lets each ingredient speak for itself. Chef Ng Kam Kwan trained for more than two decades in this tradition. You can read more on our Edomae omakase page.
Where is MIYU, and how do I get there?
MIYU is at 13A Dempsey Road, Singapore 247694, in the leafy Dempsey Hill dining enclave — a ten-minute drive from Orchard Road and the CBD, with Napier and Orchard the nearest MRT stations. Full directions and parking notes are on our Find Us page.
How far in advance should I book?
Our counter is intimate and seats fill quickly, so we suggest reserving two to three weeks ahead where you can, and earlier for weekends or a special occasion. You are always welcome to reserve a table online, or send us a WhatsApp message at +65 8028 3168.
What should I expect during an omakase sitting?
Expect a sequence of small, considered courses — a seasonal appetiser, sashimi of the week’s finest catch, a warm dish or two, a thoughtfully paced run of nigiri, a signature hand roll, and a seasonal dessert. The chef works in front of you, and the menu shifts with what is at its peak at Toyosu Market. No two visits are quite the same.
Is there etiquette I should know as a first-timer?
Very little is required beyond an open mind. Eat each piece of nigiri soon after it is served, feel free to use your hands, and let us know of any preferences at the start rather than mid-meal. Strong fragrances are best avoided, as they compete with the aromas of the food. Our first-timer’s etiquette guide covers the rest gently.
Can the menu accommodate dietary needs or allergies?
Where we can, yes. Because the menu follows the market, we ask that you tell us of allergies or restrictions when you book so the kitchen can prepare thoughtfully. A cooked-food dinner omakase is also available for guests who prefer prepared courses to raw fish. Please let us know in advance and we will do our best to accommodate you.
Is MIYU suitable for a business lunch or a special occasion?
It is well suited to both. The room is quiet and unhurried, which lends itself to conversation over a business lunch, while the counter and the seasonal menu make an anniversary, a birthday or a celebration feel considered rather than showy. For a private group, our private dining option gives you exclusive use of the restaurant.
Is MIYU well regarded?
We are grateful to be rated 5.8/6 by verified diners on Quandoo and 4.6/5 on Google, and to be recognised regularly as one of Singapore’s best-value omakase experiences. You can read guest reviews and press coverage on our reviews and press page. We would be honoured to welcome you to the counter at Dempsey Hill.
